I found half a dozen recipes last night for egg-free cakes, some of which were on vegan websites. So as I started baking them this morning I couldn't stop thinking - "Why not vegan too?" I'm just really hoping they taste as good as I hope!
Batch 1 - I start working through the recipe (dividing all the ingredients by 3 as I only want a small batch) but then I get to a random ingredient - Vinegar! Who puts vinegar in cake? Ewww. I debate my faithfulness to the recipe and lose; I just can't put vinegar in a cake! I hate the smell and the taste. Even if you can't sense it in the final product - I would know... The batter heats up into neat cake pops but the final taste is somewhat dry. Lack of vinegar maybe?
Batch 2 - Much more promising. It seems quite normal with the eggs replaced by yogurt. The batter is smooth (and tasty) with good fragrance. They cook evenly and the resulting cake has a moist and pleasant consistency, but I'm not happy with the after-taste which seems very cocoa-y.
Batch 3 - Next is a brownie mix. The batter is really runny and I have to put the piping bag in the fridge to stiffen it before I pipe it onto the cake pop griddle. The mix hits the griddle and spreads... and spreads... and spreads. Soon it's dripping off the edges and onto the work top. I could cry! I shut the lid whilst praying for help. There is no divine intervention and no real rise. I'm left with a congealed, but cooked, mess. No dice.
Batch 4 - The ginger cake calls for golden syrup - which I find yum and ick in equal measures. Yum because the taste is divine - Ick because its so sticky and messy. Why, oh why do they put it in a mini paint tin? It just gets everywhere - you can't pour it because of the groove in the tin and when you spoon it out it drizzles onto the tin... The final cake is nicely spiced but I can't really taste the golden syrup making the ickiness pointless!
Batch 5 - By far the best - a delicious vanilla and lemon zest mix. The flavour of the cooked cakes (and the batter) is luscious! Yum yum yum! But it's so impractical! I can't have a fridge full of lemons where I never use the juice but grate off sections of the rind.
Now for my versions of my favourites.
Batch 6 - I rework Batch 2, toning down the cocoa and adding some chocolate extract and some coffee extract. The result is far smoother and it goes down almost too well.
Batch 7 - I incorporate the spices from Batch 4 into a recipe which blends the best of Batch 2 and Batch 5.
Batch 8 - Reworking Batch 5 will be difficult as it was so gorgeous but I'm determined to find a way to make it more cost effective so I don't have to charge more for it! I swap out the zest and make it pure vanilla. It's yummy but I'm determined to raid the shops and find a lemon substitute - either an extract or the juice - but it will have to be another day; I'm exhausted!
So now my fridge is full of cake and I need a break!
